Lemon and Herb Crusted Lamb


Serves 4


  1. Preheat oven to 200C (400F, gas mark 6)
  2. In a bowl, combine breadcrumbs with the marinade, mixing well.
  3. Place racks of lamb in a baking dish, press breadcrumb mixture onto the lamb.
  4. Bake in moderately hot oven for about 25 minutes or until lamb is cooked as desired.
  5. Stand, covered for 10 minutes before carving.
  6. Serve with seasonal vegetables or salad.
